    @Sojourner – Not at all callous! I thank you for saying this. One of the things I want is to show that community is very important. I’m trying to find local like-minded folks, but we are extremely remote and no takers so far. Also, I want to point out that even when you think your preps and all are safe, and sufficient, guess what? ANYTHING can happen to wipe you out at any time! We thought we were good to go for about 2 years. Not any more! Thank you, Sojourner for your wonderful comment.💕✝

    This was a strange growing season for me! I had a volunteer patty pan squash (I thought) that mutated into almost a small orange pumpkin-like thing. When they were small they tasted really good but I haven’t any idea what they cross-pollinated with in the year prior. I saved a couple to see what they make next year. There were lots of tomatoes that were doubled and even some peppers. A few other strange things happened in the garden this summer, also, such as insects I never saw before.

    @AiNt-RiTe-Acres I. too, have heard of a few issues with etsy. I am just going to wait until Tag and the crew get something together for this site. I’m sure it will be honest and reliable once it’s up and running. Is that an option for you?

    I love having meals in jars for when I don’t feel well, which is all too often in winter due to autoimmune issues and just old age. I spend a lot of time putting up several things in quarts for the hubby and myself which is quite enough, along with cornbread or crackers or whatever. I worry about getting all the nutrition we need so try to be all inclusive with ‘food groups’. I’m a kind of ‘canning rebel’ since the usda or whomever does not provide my food and I grow my own, so my house, my rules- with food safety in mind nonetheless. I put up several quarts of Brunswich Stew, beef stew, Pozole, unstuffed cabbage roll soup, vegetable beef soup, chili. spaghetti sauce, celery soup base, chicken soup, tomato soup, mixed veggies for soup or pot pies, and many other things. My favorite is Pinto beans, and other dry beans, They are the easiest thing to can! In addition, I do pints and half-pints of single ingredient meats for quick use in various recipes. And of course, I have pints of green beans, squash, okra, peas, corn, and so forth, I do lots of tomatoes for tons of other dishes, Then I have my relishes, pickles, fruit butters, and jams/jellies. I try to have a minimum of 2 years worth of things ready to eat just in case of things like crop failure, shtf, or to help my family if need be. In over 60 years of canning, it has become a way of life for me and I know what is in my food. I really like some of the ideas given here, so will be increasing my horizons even more!

    After I made my applesauce, apple butter, apple pie filling, apple juice, jelly, and pectin for other jellies & jams, I still had a ton of apples left. I remembered a very old way of preserving them- what you do is to peel, core, slice a big bunch of apples (I did about a peck) then cover them with sugar- a lot of sugar. Then you throw a clean cloth over them and let sit over night. This draws out the juice and softens the apples a bit. Then cook them about 5 to 10 minutes until the softness you like but don’t cook them too long- maybe just until they start to get almost translucent. Then you just jar them up in pints and water bath 10 minutes. You don’t dip the apples in lemon juice or anything. They get a little brown but it goes away when processed and they are a pale amber color. We love them so much and you can use them many many ways, but we just eat them! Yes, it’s a lot of sugar, but it’s so worth it! The recipe was published years ago in a newspaper column called “Roaming the Mountains” by John Parris. Back in the old days in Appalachia this was a staple and they just called it Apple Preserves.

    @Pintsize_Treasures – You posted one of my all-time favorite Bible passages! Know what’s funny? I just read this (again) to my husband and he got up pretty soon thereafter and got to work on my pantry/mudroom that has been unfinished for almost a year. Sometimes we ladies just need to give subtle little nudges to remind our men of our worth. And in the end, he will be well rewarded! I’m planning his favorite meal for supper and will let him know often how proud I am for him doing all he does. He’s 74 years old but has such a wealth of knowledge in so many fields that my heart breaks a little every time I think of our aging bodies slowing us down. God bless you for posting this!

    Now here is a topic I’m very interested in. I have been really getting into it in the past few years. I’m trying to remember some of the things my Grandmother tried to teach me back in the 1960s. But I have tons of lemon balm, mint, and a few more, but my most recent endeavor is a corn silk tincture I’m using for kidney/bladder issues. I’ve recently started comfrey from seed. I have mullein growing everywhere. One thing I would love to find out is what I can grow for hubby’s prostate health (he’s 74) and he’s been on 2 prescriptions for it for years. But al in all, I want to expand my knowledge and create a whole medicinal arsenal for the coming times. I’ll be following this closely!

    As a senior citizen with 7 kids, 13 grands kids, and 10 great grands (soon to be 12), I try to be a good influence on them. Teach them about morals and kindness, etc. I try to be a good neighbor by sharing things from my garden and what not. I show kindness to strangers even when they bite my head off. I try to share the Love of God with everybody. I treat everybody with resect. I help anyone at any time that I possibly can. I try not to judge. I try to show that goodness begets goodness. I teach all that I can to anyone who will listen. And I am always willing to listen to anyone’s problems and only give advice where needed. I have always, always, always asked God to let me be of help to someone somehow along the way each day.

    Does the flavor of the bay leaf leave a taste in the oatmeal? I want to put some in my long term storage but have been hesitating. So far (knock on wood) I’ve not had any bugs in my stuff but I want to make sure I don’t get any on down the line. I have gallon and half gallon jars that I seal it in.
