    Just starting to bake myself, so I can look forward to plenty of mishaps!

    I know baking is supposed to be more of a science than an art, but I was winging it with oatmeal muffins the other day, and they turned out pretty good, kind of like the bites you may have seen at Costco.

    I just whizzed some steel-cut oats in my coffee grinder to make some flour, melted some butter with some honey until the consistency looked right, let it cool a bit, added the flour and an egg. Into a muffin tin (filled up 6 spots), and into the toaster oven at I think 350. Was very happy with what I whipped up: had 3 hot out of oven for dessert, and 3 in morning for breakfast with coffee.

    Howdy from Central Texas!

    I don’t have any school-age kids myself, but I’ve left teaching Spanish in the public-school setting and hoping to connect with the homeschool community. I have a detailed profile, but I think the bio is private, and trying to figure that out. I’d be much obliged if someone could let me know if it is visible to them or hidden.

    I have been following many of the popular homesteading channels on YouTube for several years, and went all-in to gardening in March of 2020 (when ‘they’ pulled the trigger on their agenda), without ever having gardened before.

    Yes, boiling for 3 hours was tedious! But those waterbathed potatoes looked fantastic, right???

    have you seen the YouTube channel Make it Make? Very enjoyable and informative ‘rebel’ canner. I’m new here, so perhaps she was mentioned in another thread here: she did cause quite a stir!

    I myself am new to canning, but have probably watched 100 videos. Started by just water bathing some jars of water to see how the lids worked (lids still holding), then tried ‘Amish’ waterbathing raw-pack chicken (3 hours at rolling boil). Four quarts, and I did open one the next day and it was very good. However, all the lids popped after about a week in the pantry. Bummer.

    I did have my first canning success the other week with salsa verde using tomatillos from my garden, two quarts. Tasted good before canning! Lids still holding firm!
