I live in Florida, and I also have high humidity to deal with. I tried storing corn in 55 gal barrels and when I checked it, it was moldy and I had to throw it out 🙁
After doing that, I discovered that vacuum sealing prevents this, I have have stored oatmeal, rice beans with this method for about 3 -4 years with zero problems, as well as whole grain wheat and barley.

( with rice because of the sharp edges I use the lunch bags because of the sharp corners on the rice which can poke thru the bags as shown in this video )

Then after you have done this, I have moved to bury the food in 55 gal barrels underground. The reason for this is the ground temp does not heat up that much as if stored in my home, and the food is protected against rodents, theft, and heat, as it would be stored in my home and the power went off… The testing I have done with this so far is very promising.

I have purchased backups for the things I use most like bread machine, and my vitamix. I have bought multiple sets of shoes and socks, and I grab extra shirts when I am at the thrift store.
My take on having not the same system is different. I have 12, 24, 36v solar, I am thinking I should be able to get one of the systems going if one breaks down I have 3 systems I can rebuild from the parts I can get…
Having multiple solar systems has saved me till I could get the broken systems back up. I do imagine with war / bank fail on the horizon we have to think even more in these terms.

Why, why local food only? Myself I will eat food from far away or local. A person in Alaska has a hard time growing wheat as a person in father down.

Options…. depend on how much money you have to play with…
Option 1) motorcycle stored in an self storage unit mid way to your work. Having a backup vehicle that runs with a stash half way might be an alternative. I keep a bicycle in my van as a backup means of transportation.
But what are you planning for that you would need to have help? EMP, war grid down?

Yeah I have a few pounds in reserve as well. Trying to do everything local can be painful as smelting your own copper for your generator.

So you are also rejecting organic chem free food that is a long way off? I still don’t see the connection of travel distance to where you eat it. Some areas of the country may not have the bug pressure that you have where you grow locally. Thus for the small cost of travel it may be easier to take the abundant organic chem free produce and move it to where it is desired….
