Sprouting potatoes
My potatoes are sprouting. I keep them in my dark, underground basement. Can I pressure can them to keep from losing them? Didn’t have this problem last year….

I don’t see why you couldn’t can them. I knock off the eyes and eat them that way. Maybe there’s lots of moisture in the basement?

You can pressure can them for 40 mins

yes, just take the part under the sprout off and proceed as usual. I’m not sure if it’s even necessary to remove the part under the eye, but it’s what I would do.
