    I used sweet potato peels (cleaned the potatoes before peeling) and added sugar. I made the cedar vinegar using clean cedar foliage and sugar. If I remember correctly, cedar has a good bit of vitamin C, so I would think that its vinegar should as well. I just take about a shot glass every now and then.

    Excellent! Sounds like you’re having fun making them. I’ve made pineapple, banana, orange, mixed citrus, sweet potato, and cedar. Surprisingly, cedar is the best tasting of those.

  • I’m sure it’s not well known, but Union Pacific cut shipments of fertilizer by 20% this past April. They also cut shipments of DEF that trucks require to run on diesel. They claimed it was to reduce rail congestion. Has anyone seen any rail congestion that needed to be relieved? Does anyone see any kind of pattern going on with our food supply?

    I’ve also bought cuttings from Permapasture Farms and they came up nicely. They were out of stock when I first wanted get them, though, and I bought crowns on Etsy. I figured I’d have nice sized plants sooner with crowns. All are doing well and the plants from cuttings are trying to catch up with those from crowns.

    Thanks to everyone for information on how you are starting stone fruit trees from pits. We got some excellent plums and nectarines last week. We saved pits to start trees and your info will be very helpful.

    Maybe? I’ve seen people use IBC containers for a lot of projects that I’d like to try. We just moved into an old house and have so much work to do here that we won’t have time for more projects for a while. I don’t know where to find them affordably, BUT if we come across some, we will get them.

    My compost is crawling with them again. I don’t know enough about them and would like to know how to overwinter them, myself.

    Maybe you can try pine needles if you don’t have cedar? Pine needles are high in vitamin C (you can extract it by making a tea from them) and would probably make a good dual purpose vinegar, good for cleaning or food usage.

    I’ve mostly used my homemade vinegars in the rinse cycle of my washing machine as a softener/disinfectant.

    It will do that if it continues to be exposed to air. It’s the natural fermentation progression. You have to seal it off to keep it from happening.
