    (‘Velveet-tee’ Melty cheese)

    Ingredients:

    -(32 ounces) cheddar cheese (or Colby, Monterey Jack, Pepper Jack, CoJack, or any combo of these)

    -(8 ounces or 1 cup) milk

    -(3½ Tbsp) butter

    -(2.75 tsp) sodium citrate (required)

    -(1/8 tsp) sodium hexametaphosphate (optional)

    Method:

    Shred the cheese. (Do NOT use preshredded cheese in a package. It won’t work)

    In a pot over medium heat, melt the butter into the milk.

    Add the sodium citrate and sodium hexametaphosphate, stir to dissolve and bring to 150ºF.

    Slowly mix in the shredded cheese and stir / whisk to a smooth consistency.

    Transfer to molds* while still hot.

    Store in the fridge for at least 24 hours to set.

      My family LOVES it. I love it because I control everything in it… REAL cheese, REAL milk, REAL butter. I don’t use the optional sodium hexametaphosphate and it’s perfect without it, IMO. But in order to make it super Melty, the sodium citrate is essential. Let me know how you like it!😀😀

    Hmm… I’ve heard of a version that mixes baking soda and sodium citrate.

    You can make sodium citrate by mixing 5 parts baking soda to 4 parts citric acid.
