We have several general recipe discussions that have gotten long and difficult to sort through. So I wanted to make a more specific recipe thread on my current project- condiments. As store-bought bottles run out, I am replacing with homemade versions. Here are a few I’ve tried-
Basic mayo:
– 1 egg, fresh and clean
– 1 Tbsp mustard
– 1 Tbsp apple cider vinegar
– 1/4 tsp salt
– 1 cup oil (use your favorite, I usually go with avocado oil or bacon grease.)
Mix all ingredients except the oil in a food processor or blender for 30 seconds. Gradually drizzle in the oil while the processor/blender is running.
Thousand Island dressing:
– 1 cup mayo
– 1/4 cup finely chopped onion
– 2 Tbsp ketchup
– 2 Tbsp sweet relish
– 1 tsp lemon juice
– 1/2 tsp paprika
Blend and enjoy!
Salad dressing:
– honey fermented garlic; 6 garlic cloves and 3 spoonfuls of the honey
– preserved lemon, 3 pieces ( I cut lemons into 8 pieces when preserving, so this is 3/8 of a whole lemon. Folks preserve lemons in different sizes so bear this in mind.)
– 1/2 cup apple cider vinegar
– 1 and 1/2 cup your favorite oil
Blend and enjoy!
Jalapeño pineapple hot sauce:
– 6 jalapeños
– 1 can pineapple, drained
– 1 onion
– 5 garlic cloves
– 1/2 cup your favorite vinegar
– cilantro to taste
– lemon juice to taste
Blend all ingredients until smooth, then simmer for10 minutes.
