    We live in very humid southeast Texas. I recently had to throw out rice that we had stored incorrectly.

    I had placed bags of rice in the freezer for a few weeks to kill any insects. This must have left the rice damp because there were some spots of mold throughout the stored rice.

    Can anyone offer advice? I want to be a better steward.

    72 hours in the freezer is supposed to be enough to kill larvae. Then you have to let it come to room temp.. 24-48 hours to ensure it’s dry. If your humidity is so high as to impact the drying, you might put it in a dehydrator, or low temp oven, for a short time just to be sure. For your area, desiccants in the stored rice is probably a good idea.
