I cannot guarantee that he is still doing it, but Jarret Scott of Durham, NC did all the solar installations for a Buddhist retreat center in the Arizona desert in 2010. They were building cabins for a three year silent retreat and he did all of the 30 or so cabins and houses. He’s a lovely young man and would not overcharge you at least. You could look for him; I don’t have his contact info anymore.
The easiest way to find him is to find his wife, Mira Shani, who is a yoga instructor.

How has it been going with the ferment with the lids?
I’m just about to purchase some of those silicone lids and weights from Masontops. I want more ferments in my diet, but because I work during the school year and take care of both my husband and my stepmom (an hour away), I am thinking the constant jar burping and leaking is just making it harder to want to do it even though it turns out fine. Would be nice if it were just a bit easier.
I have a few mulberry trees although we get few berries. I’ve been thinking of doing something with the leaves. I had not thought to ferment them.

If we could dig into our yard, I would bury a fridge. Unfortunately, it’s all rock about 1 inch down. But it’s a great idea anyway. One of the perks of living in this county is that there are NO building codes. Just one wee electrical code. That’s it. I couldn’t believe it when I found out. But when I tried to get an inspector to approve a job for insurance – done by a local guy and my husband – they said it didn’t exist. Insurance had to just approve it as is because of the lack of regulations.

I ended up making many quarts of puree/nectar. A little in a glass with water and ice is delightful!

I absolutely love all those idea. We don’t really eat that way though but I think I’m going to have to can a bunch so they are not wasted. I was wondering about apricot nectar. I’d rather have a drink than canned fruit I’ll never use. I’ll have to find a recipe for that.

I still have probably 15 half pints of apricot jam from two years ago! We don’t eat much jam. 🙂 I hadn’t thought of an apricot vinegar. I will see about that, thank you!

I just bought 8 more trays to add to my dehydrator. Still it takes nearly 24 hours to dehydrate 9 pounds of apricots. I have at least 50 pounds in my refrigerator and gave away 35 pounds yesterday. LOL This afternoon, I’ll start another 9 pounds to dehydrate. I’m considering canning – we don’t have a big freezer, just the little one on the refrigerator – but I didn’t want jars and jars of fruit. But I might have to to avoid wasting them. They are bruising too quickly to wait to be dehydrated.

I’ve known them for years but haven’t seen them in some time. It would be a shame if he wasn’t doing solar installs. He was very good.

I like that yellow one and I think you could use your trays and remove them when you want to use the Excalibur, but I guess you couldn’t use them at the same time. If I come up with good trays free or cheap, I think I’ll sew that one up.

I think you’d just want to make sure you’re using filters that aren’t fiberglass. I saw folks using them for HEPA filtered covid masks and turns out they were breathing in fiberglass! You might not want those particles in your food.

Yes, I just discovered that dried greens will uptake moisture again from the air. I had to put air dried crispy greens into the Nesco for an hour and then jar them up soon after because they had gotten a little pliable again. I really didn’t want to up our bill except for dehydrating the eggs, but if it means finishing off tons of air dried greens for next winter, I’ll just have to go with “it’s worth it”.
