Even with all the preservatives they put in store bought mayo, it still isn’t very shelf stable. Since they started using PLASTIC JARS, it doesn’t last 6 months on the shelf before it goes rancid & turns colors (yellowish color). I had bought a few jars to have on hand to make potato salad & other salads that require mayo for our family get-togethers/cookouts. I usually have to make a lot of sides in large quantities. I got one of the remaining jars out at Thanksgiving and it had turned yellowish in color. I opened it and it was rancid. Best Buy Date was May 2023. It had been kept in my big pantry that is cool & dark so go figure. I like your idea of vacuum sealing the remaining portions in smaller canning jars. I would also add some lemon juice as suggested above. Remove the air by vacuum sealing could also help stabilize it even more. I may try that when I make homemade that I use, otherwise, for myself. I vacuum seal A LOT of things to help keep them fresh longer. Even dry goods, beans, pasta, etc.
