I’ve inherited my mother’s intuition and “know how” to always have food stored, especially with the garden bounty. Food storage comes easy to me whereas others struggle. We always can/preserve/freeze more from the garden than we need for the winter just incase next year’s crop is a dud. We just keep things in rotation. Two yrs ago after the C nonsense started, I started doing a big pantry stock of the dry goods and other things we buy on a long-term food storage basis – a year’s worth on rotation of everything. Now, with food prices, we have increased that food storage to almost 2 yrs in most foods, especially all the dried goods we use and things like tuna, salmon, etc in cans. For back up, we have some bought canned goods of veggies and fruit. Even though we do our own canned/frozen, a back up is always needed. An investment we made the past 2 yrs in buying several freeze dried #10 cans of various protein, veg and fruit, eggs, milk, butter…for emergency use only and those are tucked away safely. I would LOVE to have a freeze dryer but it’s not feasible for me right now, maybe one day. Next year, my garden will be even bigger and Lord willing, I’m going to do ALL my tomato products (and rely on the store for none of it) with the exception of what I already have in storage as back up. Expanding my herb garden as well so I can dry almost all my own.
